Bak Kut Teh as we know it today, is a ‘brothy’ pork ribs soup, with Balestier Road boasting the best restaurants and hawkers for it… a supper classic amongst locals. What few of us realize however is that it was actually a dish catered for the coolies of the ‘50s.
