Chicken soup with wolfberries and dried longan
In this first of a three part series on Chinese soups, learn how you can uselocal fruits as ingredients for spicing up your chicken soup.

Ingredients
- 2-3 litres water
- 1 whole chicken, chopped
- 2 tbsp wolfberries, rinsed
- 2 tbsp dried longan, rinsed
- 3 pieces Chinese yam (wai san)
- Salt to taste
Method
- In a large pot, bring water to a boil. Put in the chicken pieces and boil for 30 minutes. Skim off impurities and fat.
- Add wolfberries, dried longan and Chinese yam. Lower heat and simmer for about 1 hour.
- Season soup with salt. Serve hot.
