Chicken soup with wolfberries and dried longan

In this first of a three part series on Chinese soups, learn how you can uselocal fruits as ingredients for spicing up your chicken soup.

Ingredients

  • 2-3 litres water
  • 1 whole chicken, chopped
  • 2 tbsp wolfberries, rinsed
  • 2 tbsp dried longan, rinsed
  • 3 pieces Chinese yam (wai san) 
  • Salt to taste


Method

  1. In a large pot, bring water to a boil. Put in the chicken pieces and boil for 30 minutes. Skim off impurities and fat.
  2. Add wolfberries, dried longan and Chinese yam. Lower heat and simmer for about 1 hour.
  3. Season soup with salt. Serve hot.
