Laksa

What is it:

Laksa (feature picture) is a popular Peranakan dish consisting of rice noodles and rich spicy gravy made from coconut milk, spices, dried shrimp and chilli. It is usually topped off with fresh prawns, cockles and sliced fishcake.

LontongLontong

What is it:

Lotong is a Malay word that actually refers to compressed rice cakes, but is also used to refer to a dish where these rice cakes are served in a coconut milk and vegetable stew. This dish is often topped up with a dash of sambal (chilli paste) and kerisik (toasted coconut), resulting in a rich, flavourful taste.

Mee_rebusMee Rebus

What is it:

Mee Rebus is an Indonesian dish, which literally translates as “boiled noodles”. Yellow egg noodles are boiled in thick, slightly sweet and spicy gravy, made from potatoes, curry powder, water, salted soybeans, dried shrimps and peanuts.

MeeSiamMee Siam

What is it:

While “Mee Siam” literally means “Siamese noodles”, this dish actually has Peranakan origins. Vermicelli is served in light, spicy, sweet and sour gravy, and topped off with a slice of boiled egg and spring onions. It is also available in a dried form.

Mee Soto

What is it:

Mee Soto is a Malay spicy noodle soup, made with either yellow egg noodles or rice vermicelli, and blanched in an aromatic, tasty soup boiled from special spices and chicken stock.

Mutton Soup

What is it:

Mutton soup is more commonly known as “sup kambing” in Singapore, and refers to a hearty mutton soup slowly simmered with aromatic herbs and spices, and garnished with fried shallots and fresh cilantro. Often accompanied with soft bread.

Nasi_lemak_01aNasi Lemak

What is it:

While the Malay word “nasi” refers to rice, the word “lemak” refers to a certain richness derived from the culinary usage of coconut cream or milk. The name “nasi lemak” is thus derived from the cooking process whereby rice is soaked in coconut cream and then the mixture is steamed. The rice is then served with small dried anchovies, roasted peanuts, sliced cucumbers, fried fish or chicken and sambal.

What is it:

Satay is a popular dish in Malaysia, Indonesia and Singapore, whereby meat is skewered and then grilled or barbecued over a wood or charcoal fire. The meat is usually marinated in a sweet seasoning made with turmeric, and later served with a spicy gravy made from crushed peanuts.
